The art of Champagne
HOXXOH Ruby
We wanted to create a rosé Champagne unlike anything the appellation usually offers — a rosé that awakens the senses with freshness and brilliance, rather than weighing them down with heaviness. To achieve this, we invented a new oenological technique, and only after four years of experimentation were we able to unveil our first Ruby cuvée, a Champagne both different and truly sumptuous.
At HOXXOH, every cuvée is a creation, where craftsmanship meets audacity to elevate the essence of terroir. Our Ruby, a unique rosé blend, is the perfect example: 97% Chardonnay and just 3% Pinot Noir. A proportion that might seem minimal… yet it reveals an intense, luminous ruby-pink hue.
The tasting is an unexpected journey: the pure freshness of Chardonnay, harvested from our vines along the Marne River, intertwines with delicate red fruit notes. The Pinot Noir, aged for several years in open vats, naturally concentrates and develops complex, surprising aromas of ripe strawberries and deep red fruits, bringing both typicity and singularity to this rosé.
Within the Champagne appellation, there are two authorized methods for producing rosé:
- Rosé d’assemblage (blending) This is the most common method in Champagne, and unique in the world of sparkling wines. It consists of blending a white base wine (from Chardonnay, Pinot Noir, or Pinot Meunier vinified as white) with a small proportion of still red wine made from Pinot Noir or Pinot Meunier. This approach allows for great precision, subtle aromatics, and perfect control over both color and balance.
- Rosé de saignée (maceration) Here, Pinot Noir or Pinot Meunier grapes are left to macerate on their skins for a few hours, extracting both color and aromatics. The term saignée (“bleeding”) refers to drawing off the juice after maceration. The result is often a more powerful, structured, and vinous style of rosé Champagne, though sometimes less refined in its aromatic finesse.
For our HOXXOH Ruby Rosé, we deliberately chose the blending method. By working with Pinot Noir aged for several years in open vats, then blending it with a majority of Chardonnay, we achieve both the crystalline freshness of Chardonnay and the fruit depth and concentration of Pinot Noir, while maintaining perfect control over elegance and color.
This expertise is what gives Ruby its unique equilibrium—at once atypical and refined—within the universe of rosé Champagnes.
Unlike most rosé Champagnes, which often display an orange-tinged hue, the color of HOXXOH Rosé is truly singular — a deep, luminous ruby pink that captivates the eye before it enchants the palate.
It is with immense pride that we present this one-of-a-kind rosé to discerning connoisseurs. To honor its rarity, every bottle is adorned with a hand-cut 0.45-carat ruby, making each creation not only a Champagne, but a jewel in its own right — entirely unique, forever unrepeatable.
