Aging: the wine spends 18 months in 205-liter barrels, made from particularly fine-grained French oak from the Tronçais forest. The barrels are made by the prestigious Damy cooperage. These are 12-year-old barrels, which have already been used to age great Burgundy wines (Meursault). The barrel provides micro-oxygenation on a woody base, without denaturing the wine. 

Grape variety: 100% Chardonnay from Côte des Blancs, Grand Cru from Cramant, Oger and Chouilly.

Vinification: traditional Champagne pressing. Natural gravity settling and racking. Alcoholic fermentation between 16 and 20°. Aged on lees.

Dosage: 4g per liter, Extra-Brut

Alcohol: 12.5%.

 

Grand Cru Bland de Blancs 2014

The year 2014 was characterized by relatively warm conditions, particularly in spring and during the ripening period. A summer of unstable weather preceded a harvest carried out in ideal conditions, alternating sunny, slightly warm days with cool, dry nights. The harvest was of exceptional quality.

Tasting

Bright, clear golden color with alively, youth fulmousse. Pure, clean nose of chalk, wet stone, hazelnut, fresh citrus, lemon grass and white peach. Dry, with a beautiful bite and great purity, high-class Chardonnay aromas with a chalky presence, stone fruit aromas with hints of ripe citrus, brioche and nougat with a long, persistent and pure finish.

FOOD PAIRING

Ideal as an aperitif, it can accompany you throughout the meal Oysters, shellfish and raw fish, of course, but also poultry, fruity cheeses and low sugar desserts.
